Severina comes from Coatzingo, Puebla. She was one of nine kids in a small town where people worked in the fields, especially the corn. Her mother, Elena, taught her to make tamales.
Every tamale we make is her recipe, Puebla style, and the business is named after how everyone orders them: by the dozen.
